1 kombocha squash
Red quinoa
1 lb chicken
Drizzle of olive oil
Curry sauce (I like the Golden Curry from Walmart)
1 bag frozen slices onion & pepper blend. ( You can use fresh peppers if you want.)
Dash of ground ginger
Preheat oven to 350 degrees.
First, cut the top of your Kombocha squash and gut out the center like a pumpkin. Drizzle the inside with your olive oil. Place in the oven at 350 for approx 30 minutes until tender.
Secondly, cook your Quinoa as directed.
Meanwhile, grill up your chicken as you prefer. I tend to just grill it in my skillet with olive oil. Once it's just about done, I add in my onion pepper blend.
Then make your curry sauce as directed, and once your chicken is thoroughly cooked, add the curry sauce to it with your dash of ground ginger.
Once the kombocha is tender, take it out the oven.
Sometimes, we mix the Wuinoa with the curry chicken and sauce snd place the mixture in the center of the komboch, but usually we're so hungry, we just make a plate!
